Quick and Easy Brownie Parfaits
Want a foolproof way to having more friends this summer? Make these on repeat at your summer barbecues and you will never have an empty seat at your table!

- 1/2 recipe "The" Best Brownies (linked in the blog post)
- 8 scoops ice cream of your choice (I love cookies and cream!)
- 2 cups sliced strawberries plus more for garnish
- whipping creamed for garnish
Bake brownies as directed and cool (or use your favorite brownie recipe...or, heck, you can even buy some brownies!)
Cut the brownies into 2-inch squares to make assembly easier.
In 8 small glasses (or if you want to make mini versions, you can use shot glasses) or small mason jars, place a couple of brownie cubes at the bottom. Next, place a scoop of ice cream on top, the scatter 1/4 cup of the strawberries on top of the ice cream. Place a few more cube of brownies on top and finish with a bit of whipping cream. Continue with the remaining glasses.
Serve with a fresh strawberry.
