I have two questions for you on this steaming hot summer Friday:
- Do you love coffee?
- If it’s hot where you are too, what are your tricks for keeping cool?
It’s stinking hot in Toronto this week (like, over 40°C with the humidex…which is like 104°F) and I am slowly melting.
Actually, I’m quickly melting.
And I love coffee.
So this is a problem.
Enter in my hack to get me through this humidity AND enjoy my coffee.
Coffee Ice Cubes..
Yup…it’s what will elevate your iced coffee game for realzzzz.
I made this Iced Mocha Hazelnut Latte a while back and used coffee ice cubes but I never really explained why.
I make a percolator of coffee every morning (and, yes I’ve sort of mastered how to make 4 cups just for me and my hubby) but I often have leftover. And, who am I to throw anything away…
So, what I do is pour the leftover coffee into ice cube trays and freeze it. I use them in my morning smoothie but I’ve also used them to make the best iced coffee!
Today, I wanted to see what sweetened coconut milk would taste like so I took a can of full-fat coconut milk, added about 1/4 cup maple syrup and cooked it down for a bit until it was a bit thick.
Then I put some of the coffee ice cubes into a glass, added some cooled off leftover coffee…
…and added some of the sweetened coconut milk. It clumped up a bit (I think it was because the fat congealed when it hit the cold ice – but it was still yummy). I think I’ll try it in hot coffee and see how that works.
Or how about adding one ice cube to a shot glass and topping it off with a shot of Baileys??
Super yummy!!
And the best part is, coffee + alcohol = a really good time!
