Rustic Peach and Almond Crumble Bars

To me, nothing screams “summer’s here” more than the scent of fresh peaches.  It’s that drippy, juicy sensation of sinking your teeth into a ripe, locally grown peach that tastes exactly like it is supposed to taste.

Unlike that peach you just couldn’t resist buying in February (that probably came from some place like Guatemala), hoping to get those summer-memory flood gates open. That is, until you bite the peach and wonder how something so pretty can taste like a cross between a sand pit and a piece of cardboard.

I know that local peaches aren’t quite ready (semi-freestone peaches tend to be ready mid-July), but maybe you can practice with some decent peaches from our neighbors to the south or, if your lucky, you can bribe a friend who canned some local peaches last year (I used my last jar for these…sorry!!).

Go on…get your baking mojo working and whip up a batch…you won’t be sorry!

 

Ingredients:

3 c flour

1 tsp cinnamon

1/2 tsp salt

1/2 tsp baking powder

1 c butter, room temperature

1 c brown sugar

1/2 c sugar

2 eggs

1 1/2 sliced almonds

1 c fruit jam (it’s up to you what flavour you sould like here – I used orange marmalade but you could use peach, strawberry, mixed berry, etc)

Approx 2 c sliced peaches (if you are using fresh peaches, you can take a look at this  or even this for some help in prepping).

1.  Preheat oven to 350 and line a 9X13 ” pan with parchment; set aside.

2.  In a bowl, whisk together flour, cinnamon, salt and baking powder; set aside

3.  In another mixing bowl, cream together butter and both sugars until light and creamy; add the eggs and beat again; scrape down the sides and beat again.

4.  Add the flour mixture and mix again until incorporated; add the sliced almonds and gently mix again.

5.  Find your jam and microwave it until until is is a bit melted (about 1-2 minutes).

6.  Press half the dough mixture into the bottom of the prepared pan and then smear the jam over top.

7.  Get your peaches ready (I used a jar of peaches I had from last year); slice them and place them on top of the jam layer…

8.  Now drop handfuls of the remaining dough over the peaches until it is all used up…it should look like this!

9.  Bake for about 25 – 30 minutes or until is is golden.

10.  Cool (or not!) and cut into squares.  Serve with a scoop of ice cream  and some sliced peaches on the side…
