Pineapple Squares with Coconut Cloud Topping

I remember finding stacks of old magazines in my mom’s basement.  She had earmarked recipes that I guess she had wanted to try…some were from as far back as the late ’60’s.  The funny thing about the 60’s and 70’s was that there were some amazing “old fashioned” dessert recipes but some really weird main courses (the cover of one magazine had a picture of hot dog lasagna…ewww!)
I found this in an old Family Circle magazine in the basement. Sometimes, you find yummy things in the funniest places!

3 tbsp butter

2 tbsp plus 2 c sugar

2 c flour

½ tsp salt

2 tbsp baking powder

6 eggs

2 (397 ml) cans crushed pineapple, well drained

2 tbsp butter, melted

4 c coconut, sweetened and shredded

1.    Preheat oven to 350.  Butter a 9X13” pan.  Cream together 3 tbsp butter and 2 tbsp sugar. Scrape down sides and add 3 eggs.  Sift flour, salt and baking powder together; add to egg mixture. Spread into pan.  Spread pineapple over this mixture.

2.    In a mixing bowl, mix 2 c sugar and 2 tbsp melted butter and coconut; add remaining 3 eggs and mix well.  Spread over pineapple and bake for 30 minutes or until lightly browned.  Cool and cut into squares….easy peasy!!
