“THE” Best Brownies

Imagine…an absolutely HUGE tray of fresh, fudgy brownies (really, who is happy with a small 8×8″ tray of brownies?).  This makes a cookie sheet full of brownies that is soooo adaptable:
– you want them with walnuts and a hint of coffee? no problem!
– you want them with lemon zest and roasted almonds? no problem!
– you want them with a touch of orange and hazelnuts? no problem!
– you want them gluten free?  no problem!
– you want them with pecans, skor pieces and marshmallows? no problem!
– you want all these options in one recipe?
Here you go…And, you’re welcome…
Ingredients:
454g butter (unsalted is the best)
1 lb  dark chocolate (about 1 1/2 big bars you buy in the baking section of the grocery store)
1 c milk chocolate pieces (semi sweet chocolate chips work fine here) + 1/4 c flour
6 eggs, lightly beaten
1 tbsp. vanilla
2 c sugar
1/4 c instant coffee
1 c flour (substitute rice flour for gluten free)
3 tsp baking powder
pinch salt
handful walnuts (about 1 cup), chopped
1.  Heat oven to 350 and line a cookie sheet (with sides) with parchment paper.
2.  In a big stainless steel bowl, melt butter and dark chocolate in the microwave (yes, you read it right…microwave…as long as it is stainless steel, it can go in the microwave).  Heat for 2 minutes on high and stir until all is melted and smooth.
3.  In another bowl, combine eggs, coffee, vanilla and sugar.  Whisk vigorously until combined.  Add to chocolate and butter mixture and whisk again….it should be oh soooo chocolatey!
4.  In yet another small bowl (I know, I hate washing dishes too, but this will be worth it), combine flour, baking powder and salt.  Whisk (or sift through a sieve) and add to chocolate…blend again.
5. In another (yes, another) bowl, mix chocolate chips (or milk chocolate) with the 1/4 flour and add to mixture; stir again.
6.  Pour into pan and smooth out.  Sprinkle walnut over top and bake in oven for 30 minutes (don’t overcook or you will lose the fudgy goodness!).  Remove from over…slice a big chunk…poor a BIG glass of milk and enjoy every bite!

you want lemon and roasted almonds? take out coffee and walnuts, and add zest of one lemon and 1 cup almonds

orange and hazelnuts are fantastic together…replace them for the coffee and walnuts

kids will love this version…use pecans instead of walnuts and scatter 1/2 c skor pieces and 1 c marshmallows to top of pan before baking
Or you can add muddled bananas, bacon pieces and peanut butter chips (and a few crushed Ferrero Rocher for good measure!) and call it the “Elvis is in the House” special (pictured at the beginning of this post).
