Giggle Worthy Cookies: Reindeer Drops

If any of you know me – I mean, really, really know me – then you know I can be pretty silly sometimes.

Like, maybe I was a stand up comic in my last life. Maybe.

However, in this life, I’m all about the food.

But, before we get into these cookies, I want to tell you a quick food story that is a perfect segway into this post.

When I post on Instagram, I sometimes use the poop emoji to talk about things that are “crap”.  But I have a dear friend who always says, “stop using that emoji when you talk about food…it’s gross!”

So, fast forward to today’s post.

When I was thinking about whipping up a batch of quick cookies for a cookie exchange I was having, these came to mind.

Imagine rice krispie squares…but with chocolate and caramel…and dropped in clumps to resemble, well, drops.

Reindeer drops.

And by drops, I don’t mean raindrops. Or tear drops.

Think emoji…

Anyhoo, these are so easy to whip together and the best part is you have options.

You can make them all into drop cookies. You can leave the drops plain or drizzle with white chocolate – in which case, you can change the name to snow covered reindeer drops 😉 and then go ahead and add some Christmas sprinkles for good measure!

Or you can just press the whole lot into a 9″ x 13″ pan, cut in to squares and then “do the drizzle”.

Or you can do half and half like I did.

Sooooo many options!

These are a perfect make ahead treat because they stay fresh in an airtight container or can be frozen for a few months.

And you can eat them straight out of the freezer.

I should say I can eat them straight out of the freezer.  If you try it, you might break a tooth. But, in the name of research, I had to try one in it’s frozen state.

Okay, maybe I tried 6.

Giggle Worthy Cookies: Reindeer Drops Just Crumbs Blog by Suzie Durigon

Reindeer Drops

These delish treats are a chewy version of the ever-so-popular rice crispy treats...but with the addition of caramel and chocolate, they are a mouthful of chewy goodness!!
Warning: these cookies are highly addictive!

Ingredients
  

  • 1/4 cup butter
  • 20-24 caramels (you can use Kraft, Werthers or any soft caramel
  • 1 1/2 cups milk chocolate chips
  • 1 tsp vanilla
  • 1/2 bag mini marshmallows (about 4 cups)
  • 5 1/2 cups rice krispies
  • 1 cup white chocolate, chopped and melted optional
  • 1/4 cup sprinkles optional

Instructions
 

  • In a large pot, melt butter and caramels over medium heat, stirring until mixture is combined and melted.
  • Stir in marshmallows, chocolate chips  and vanilla; remove pot from heat.
  • Add in rice krispies and stir to coat the cereal well (you need to work fast here so the mixture doesn't harden.
  • Drop by spoonfuls onto a baking sheet lined with parchment or plastic wrap, and let cool.
  • If you like, you can drizzle the drops with melted white chocolate and top with some sprinkles (you're other option is to make these into squares by pressing into a lined 9"x13" pan, allow mixture to cool, cut into squares and then top with melted chocolate and sprinkles.
  • These can be kept in an air-tight container for a week or can be frozen in a ziplock bag for a few months.
